I keep thinking I’m actually talking outloud.
I have to stop all these voices in my head.
I have an industry source that revealed ALL! Ok, she only revealed one secret. But she is a true genuine industry source.
I’m talking about Chicken Stock. Yea… good ol Chicken Stock. The one that is used for Chicken Rice, Fish Ball Noodle soup, Kway Teow Noodle Soup…actually, any clear soup base that hawkers use.
This is what my industry source says :
“You know. These people, they just buy 1kg of Chicken Bones and boil a HUGE pot of water to make the stock.”
And the most shocking thing..
“They then put spoons after spoons of Ajinomoto MSG”.
“You know, you make soup with these bones for just one meal…they can use just 1kg to last the entire day!”
Ok..I knew that they used MSG to add some flavour to the stock. But this comes to a real shock to me, that they use SPOONS after SPOONS of it. Are our bodies so used to the SPOONS and SPOONS of MSG, that we no longer feel the effects of it?
Gone…gone are the high standards I’ve upheld for my Hawker aunties and uncles.

itellyiu, outside food no matter what they say, all use MSG wanla. But its not nice means no MSG. But not nice u wanna eat ah?
sad to say…they all do that. otherwise where got taste ah? maybe the higher class restaurants use better msg such as Ajinomoto
I was brought up to eat less salt, less sugar (if possible none) and less oily food. There’s no sugar in my house. Haha. Whenever I eat outside food, just don’t drink the soup.

Aiya, it’s expected. If you eat outside, expect lots of MSG or salt or sugar. It’s inevitable, I guess.

Am not.. Tht’s why I try to stick to kon-low most of the time..
Actually there are some vendors who are more passionate about their cooking and they put in more ‘liu’ in the stock.. these are hard to come by though. I get severe migraine if I have too much MSG.. something my body can detect.. but I suspect the threshold is growing..
